I have read the https://docs.grabaperch.com/pe…eate-a-multilingual-site/ page. If I want to build out the same information but in different languages do I create a 'pages' folder for each language and then add the text in the normal way?

Yes or you duplicate each region, one for each language by appending the language key to the end of the region name

I've just started looking at a multi-language site, so would be interested in any example code or pointers to follow on this.
I think I will follow strategy two.
So any help with how to start this I'd be most grateful
